DOMINIQUE'S NAMED RESTAURANT OF THE YEAR BY NEW ORLEANS MAGAZINE

NEW DOMINIQUE’S LAUNCHES MIXOLOGY SERIES

NEW ORLEANS – Award-winning mixologists Abigail Deirdre Gullo and Bryant Stainer York will join the local artisan absinthe Toulouse Red on April 10 to help chef-partner Dominique Macquet launch a new cocktail series at his month-old Uptown restaurant Dominique’s on Magazine.

A native of Hyde Park, N.Y., with roots in Georgia and Virginia, Gullo was a singer and actress in New York City before switching careers in 2005. As a result of her frequent travels to New Orleans, she decided to relocate here in 2012 to serve as head bar chef for the Brennan family at their French Quarter “spirited restaurant” SoBou. Gullo’s drinks have been featured in national publications, including The New York Times. DOMINIQUE’S ON MAGAZINE: A 'GRANDER' OPENING- March 2013

NEW ORLEANS – Dominique’s on Magazine, the Uptown New Orleans contemporary French restaurant that outgrew its own success, has reopened for business in a larger, even more historic building.

The award-winning restaurant, the expression of Mauritius-born chef Dominique Macquet, was last seen on Magazine Street in a restored Creole cottage. After numerous glowing reviews in local, regional and national publications (including Four Beans from the Times-Picayune and Best New Restaurant honors from New Orleans Magazine, Gambit and Esquire), the crush to sit down at such a limited number of tables ceased being a “good problem to have.”

We are, of course, grateful to the many friends who made that popularity happen,” says Macquet, who came to New Orleans to take over and then create restaurants in the French Quarter but ended up cooking much closer to where he chose to live, Uptown. “But after a point, you just hate turning people away. And since this is a pretty tough business, you’re not doing yourself or anybody else any favors.”

DOMINIQUE’S PREVIEW DINNER IN THIBODAUX- Saturday, November 17, 2012

If you are one of the faithful awaiting the new Dominique’s on Magazine opening in New Orleans in December, getting a preview of the menu might involve a road trip. Chef-partner Dominique Macquet is giving a big hint about his new menu at a restaurant called The Foundry on the Bayou in Thibodaux on Saturday Nov. 17.

There is a logic to the Thibodaux dinner, however, as the Foundry is owned by the same Mike Schexnayder who is also Macquet’s business partner at the new Dominique’s on Magazine, in addition to owning Le Foret in the Central Business District of New Orleans.

“In addition to previewing menu items, I’m excited to be showcasing so many local items from the Thibodaux area,” offers Macquet, who specialized in creative ways to use Louisiana products at his original Dominique’s on Magazine. “There are so many terrific things grown and made around Bayou Lafourche, and I’ve been lucky enough as a chef to get to know the terrific people growing and making them.” ...Read Full Article


‘CHEF JEFF’ HENDERSON TO COOK AT TAMARIND ON SATURDAY, JULY 7TH

NEW ORLEANS – As part of the city’s annual Essence Festival, New York Times bestselling author and motivational speaker Chef Jeff Henderson will travel from Las Vegas to cook some of his down home Deep South dishes Saturday evening alongside his friend Chef Dominique Macquet at his French-Vietnamese eatery Tamarind in The Hotel Modern.

Though Henderson, who speaks and writes about his life of adolescent crime leading to ten years in prison, hails from Los Angeles, both of his parents moved there from New Orleans. In fact, according to Chef Jeff, the foods he’ll be offering along with a book signing at Tamarind will be a tribute to his late grandfather Charles Henderson, who came to New Orleans from Mobile as a

It's been a while since there's been any news about Dominique's on Magazine, the insanely popular restaurant by Dominique Macquet that closed last November, with plans to move into a larger space this May. For some time, the plan had been to move Dominique's into a larger space down the street, though his departure and the transition to Apolline was incredibly abrupt to say the least.

Because May is quickly approaching, it seemed like a good time to swing by and see how construction was going. As the photos above show, a May opening is most definitely not happening. According to Macquet, the restaurant is now due to open by July...Read Full Article


CHEF MACQUET EYES CUISINE OF ARGENTINA

BUENOS AIRES – Renowned chef Dominique Macquet will be in Argentina March 21-25 teaching a cooking class to future professionals and selecting cooks for his two signature restaurants in New Orleans, Tamarind and Dominique’s on Magazine.

Since 1998, the Mauritius-born Macquet has made Buenos Aires a regular stop in his search for young kitchen talent, finding several team members here and watching their skills earn them top chef positions back home at the end of an 18-month program. Part of the upcoming visit, in fact, will include a meal at the acclaimed Milion in Buenos Aires, where one of his “graduates” now serves as chef.

“It’s my goal to share my love of New Orleans with young culinarians, along with my adopted city’s passion for cooking and eating,” says Macquet, who cooked his way around the world before arriving in New Orleans nearly 18 years ago. “I think anybody wanting to make a career in the kitchen would benefit from cooking for men and women who are so curious, so open, so knowledgeable and so excited about trying something new.”

Macquet’s itinerary in Buenos Aires includes a cooking class at BUE Trainers, a professional track culinary program, and another part involves interviewing cooks for an invitation to work at Tamarind, the French-Vietnamese restaurant he opened recently in the Hotel Modern, as well as at the namesake Dominque’s on Magazine, the second, enlarged expression of the chef’s personal take on New Orleans. 

In addition to the meal at Milion, Macquet says there are many Argentine dishes he hopes to sample during the visit – a list led off by parillada, a medley of meats fresh from the grill.

“It’s always fun to see what other people do with food, even things like a barbecue that you’re tempted to think would be familiar,” says Macquet. “There’s always a different way of doing things, a different technique or a different mix of spices. That’s one of the reasons, in addition to meeting lots of great young people excited about entering our profession, that it’s impossible to be bored as a chef.”

Since arriving in New Orleans after cooking in South Africa, Europe, England and in Beverly Hills, Calif., Macquet has twice won Best New Restaurant honors from Esquire magazine (1997 and 2011), been voted New Orleans’ Chef of the Year (1997) and been honored by Distinguished Restaurants of North America beginning in 2005.

Along with co-author John DeMers, Macquet is the author of two successful cookbooks, “Dominique’s Fresh Flavors: Cooking with Latitude in New Orleans” (Ten Speed Press) and “Tropical Latitude” (Bright Sky Press).  The chef has been invited to cook at the White House on several occasions, at the James Beard Foundation in New York, the US Embassy in Paris and regularly at Disney’s Epcot, Food and Wine Festival. Macquet remains proudest of a single meal, however – the first enjoyed outside prison walls in years by South Africa’s Nelson Mandela.

“Mandela has been an inspiration to so many in his fight for freedom,” Macquet says. “In the kitchen in all these years, I’ve learned there are many kinds of freedom.  And in my cooking, I want to celebrate them all.”
